Ingredients
  • 3tbsp canola oil
  • 1 small banana
  • 1 1/3cup old fashioned oats
  • 3tbsp whole wheat flour
  • 1/2tbsp cinnamon
  • 1/2tsp baking powder
  • 1 egg
  • 1/3cup natural almond or peanut butter(melt in microwave 25 seconds)
  • 1tsp vanilla extract
  • 1 1/2tbsp chia seeds
  • 1 1/2tbsp hemp seeds
  • 1/4cup unsweetened shredded coconut
  • 1/3cup dark chocolate chips
Instructions
  1. In a bowl, mash banana into canola oil with fork
  2. Add oats, flour, cinnamon and baking powder to same bowl and mix
  3. Add egg, almond or peanut butter, vanilla extract, and mix
  4. Preheat oven to 350 degrees F
  5. Fold in chia seeds, hemp seeds, coconut, and chocolate chips
  6. Lightly oil baking sheet. Carefully place heaping tablespoons of batter onto the sheet, flatten and form cookie shape with hands if desired
  7. Bake 10-15 minutes until golden brown. Use a spatula to release cookies from pan so they do not break. Enjoy!
