Ingredients
  • 1-2 tsp canola oil
  • 6 cloves garlic
  • 1 onion
  • 3-4 carrots
  • 4 celery ribs
  • 1 russet potato (250-275g)
  • 900 ml chicken broth (no salt added)
  • 1/2 tsp fresh thyme
  • 1 sprig fresh thyme
  • 5 leaves fresh sage
  • 3 bay leaves
  • 1 heaping tsp dried basil
  • 1 heaping tsp dried oregano
  • 2 chicken breasts (350-400g)
  • 2 1/2 cup water or broth
  • salt and pepper (to taste)
  • 1 heaping tsp 21 seasoning (Trader Joe's brand- optional)
  • 1 bell pepper (yellow, red or orange)
  • 1/4 cup cilantro or parsley
  • 2 1/2 cup kale
  • 2 cup rotini pasta (whole wheat)

Instructions
  1. Mince garlic, dice onion, chop celery, carrots, potato into bite size pieces. In a large pot on the stove-top, saute onion and garlic in canola oil at medium heat for 2 minutes
  2. Add celery and carrots to pot. Cover with lid and sweat vegetables at medium heat for 5 minutes, stirring twice in between
  3. Add 900 ml chicken broth, thyme leaves, throw in a sprig of thyme, minced sage, bay leaves, basil, oregano and simmer (covered)
  4. Chop chicken breasts into bite size pieces. Add potato and chicken to soup. Add 2 1/2 cup water or broth, salt, pepper, and 21 seasoning to pot
  5. Bring soup to boil, simmer (covered) on low-medium heat for 15-20 minutes
  6. Chop bell pepper and cilantro. Tear kale leaves away from stalk into bite size pieces. When measuring kale, pack tightly into measuring cups
  7. Once soup has simmered 15-20 minutes, add bell pepper, kale and rotini. Bring to boil. Simmer on low-medium heat for 12-15 minutes (covered) until noodles soften and chicken reaches 165 degrees F
  8. Remove soup from heat, remove thyme sprig, add chopped cilantro, stir, and serve
Recipe Notes

Vegetarians can enjoy this recipe by using a can of drained white kidney (cannellini) beans instead of chicken, and using vegetable broth in the place of chicken broth.
