This comforting snack was our ‘go to’ when we needed a big boost of energy during late study sessions at the library. Ingredients
  • 1/3 cup walnuts
  • 1/4 cup almonds
  • 2 cloves
  • 2 banana (medium size; ripe)
  • 3 tbsp canola oil
  • 1 1/4 cup plain rolled oats
  • 1/3 cup millet
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 1/4 cup currants or dried blueberries
  • 1/4 cup cranberries or dried cherries
  • 1/3 cup raisins
  • 1 egg (large)
  • 2 tbsp whole wheat flour
  • 1 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/3 cup dark chocolate chips

Instructions
  1. Roughly chop walnuts and almonds and grind cloves in mortar and pestle
  2. In large mixing bowl, mash banana into oil using fork
  3. Add oats, millet, seeds, dried blueberries, dried cherries, rasins, walnuts, and almonds to same bowl and mix using a spatula
  4. Add egg, flour, cinnamon, cloves, baking soda, baking powder and mix. Fold in chocolate chips and let mixture sit for 5 minutes
  5. Place rack in center of oven and preheat to 325 degrees F. Lightly oil a baking sheet. Using a large spoon and your hands, form cookies packing the oats together while placing on baking sheet
  6. Bake 15 minutes and then broil 1-2 minutes until surface of cookies become golden brown
Recipe Notes

Note: if cookie mixture appears too dry or crumbly, an extra egg can be added to help the batter bind together.
