Ingredients
  • 1/3cup flax seed(whole flax seed)
  • 1 1/3cup whole wheat flour
  • 2tsp baking powder
  • 1pinch salt
  • 1tsp cinnamon
  • 2 bananas(ripe)
  • 1 egg
  • 3/4cup skim or 1% milk
  • 1tbsp lemon rind
  • 3/4cup blueberries(fresh or frozen)
  • 1/4cup raspberries(fresh or frozen)
  • 3tbsp dried cranberries
  • 1/3cup walnuts or pecans
Instructions
  1. Grind whole flax seed in blender, spice grinder, or magic bullet
  2. Combine flax, flour, baking powder, salt, cinnamon
  3. In separate bowl, using a fork mash bananas into egg and milk. Add lemon rind (1 tbsp or rind of a whole large lemon)
  4. Preheat oven to 350 degrees F. Add dry ingredients into wet and fold until moistened
  5. Gently fold in berries and nuts. Lightly oil muffin tins
  6. Using a large spoon, scoop batter into muffin tins. Bake 15-17 minutes until golden brown and inserted toothpick comes out clean

Individually wrap and freeze muffins for an easy grab and go snack.
