Summer is here! As beautiful sun-rays fill our tiny south facing home with heat and light, our morning hunger monster shows it’s face. If  you wake up overheated and starving like us, this recipe is likely to be your favorite go-to summer breakfast. Basik Acai, a cute little shack in Kona, Hawaii, where the most beautiful, indulgent, breakfast bowls were created was our inspiration for this bowl. Packed with a bold crunch from almonds and seeds, protein, and intense flavor, this bowl is sure to keep even the “hangry” satisfied for hours!

Ingredients
  • 1/3 cup plain rolled oats
  • 1 tbsp unsweetened coconut
  • 1 cup berries (frozen)
  • 2 tbsp plain greek yogurt or alternative
  • 3-4 tbsp skim, soy, coconut, or cashew milk
  • 2-3 tbsp natural almond or peanut butter
  • 1 tbsp almonds (chopped or slivered)
  • 1 tbsp hemp, chia, or Qi'a mix seeds
  • 1/2 banana (small)
  • few fresh berries (optional)

Instructions
  1. Toast oats and coconut on pan in oven at 380 degrees F until coconut is golden brown (approximately 5 minutes)
  2. Place berries, yogurt, milk, and almond butter in blender and blend until smooth
  3. Place berry puree into a bowl, add toasted oats and coconut, top with chopped almonds, seeds, sliced banana and a few fresh berries if desired
  4. Dig IN!
